A secluded five-acre parcel on the property, Whisper Creek Farm produces a bounty of farm-fresh ingredients year-round that inspire not only farm-to-fork flavor across the resort, but ingredients that are used in the brewing of our very own artisanal beers and even in spa treatments.

The farm was inspired by Primo Garden, created to provide fresh ingredients for the Primo Restaurant at JW Marriott. Everyone loved the fresh flavor and demand for fresh produce grew across the resort. Plans were soon underway for a sustainable farm—one that would enable the resort to harvest fresh produce, but at the same time, give back to the land.

FRESH IS ALWAYS ON THE MENU

As more produce grew, so did the commitment. A barn was soon added along with chickens for fresh eggs, quail and duck. An existing apiary was soon relocated to the farm as well. Today Whisper Creek Farm features a 7,000-square-foot fruit and vegetable garden with an adjoining 6,000-square-foot outdoor event space. The land features 18 seven-foot citrus trees, including tangerine, kaffir lime, kumquat and pineapple, all natural in the Central Florida landscape. Seasonal offerings often include broccoli, cauliflower, zucchini, yellow squash, blueberries, plantains, bananas, tomatoes, pumpkins and more.

The farm-fresh ingredients are used across the resort, but especially at Whisper Creek Farm: The Kitchen. As the name suggests, Whisper Creek Farm was the catalyst for the restaurant, whose menu is directly influenced by seasonal ingredients.

MENU INSPIRATION FROM THE INGREDIENTS THEMSELVES

Executive Chef Alberto Taboada says working with a living, breathing farm is exciting. “When I walk the farm, it’s sensory. The colors. The smells. The tastes. All of a sudden something will pop and I start putting a dish together in my head.”

“Normally we come up with things based on what the chef wants,” adds Executive Sous Chef Rhys Gawlak, “It’s really the farm that determines the menu, it’s kind of a fun experience.”

“We have to be very creative, because the idea of having a farm is to be able to use everything,” according to Chef Taboada. He and other chefs at Grande Lakes are always looking for ways to compost nearly everything and return that converted energy to Whisper Creek Farm.

CREATING A FARM, SETTING A STANDARD

Whisper Creek Farm has been an unexpected pleasure for guests and is home to a variety of special events from intimate farm-to-fork experiences where guests can pick produce for their meal, to large 400-person receptions. While some hotels and resorts have gardens and grow their own produce, Whisper Creek Farm has been precedent-setting in the industry. Grande Lakes Orlando was a major influencer in setting brand standards for JW Marriott hotels implementing gardens on their properties throughout North America.

SOMETHING SWEET IS BREWING

The bees at the Grande Lakes apiary had been so busy making honey, there was more than the restaurants could harvest for ingredients. That’s when someone had the idea to include the surplus honey in a craft beer recipe. Developed in collaboration with Big Storm Brewery, the remarkably popular Surplus Beer was born. Surplus Beer is a signature Floridian honey citrus ale brewed at Big Storm Brewery. Surplus is one of a number of craft beers available exclusively here at the resort. It’s produced weekly using fresh ingredients harvested at Whisper Creek Farm. Others include Dark, Wheat/Light, Amber, IPA and Special Brew.

Captain Mark Benson is the director of fly fishing at Grande Lakes Orlando where he leads the resort’s guided fishing program as well as group and individual casting instructions for both beginners and professionals. More than anything else, he enjoys showing guests a side of Orlando that is so unexpected. It’s especially gratifying to see them, “truly present, enjoying quality time in nature,” he says.

Mark caught his first fish at the age of four, and he’s been hooked on the sport ever since.

He is the true definition of a local, having grown up here in Central Florida fishing, swimming and boating the lakes, creeks and coast with his dad. He traveled the world fishing, scuba diving and snorkeling before returning to Florida. Certified as a U.S. Coast Guard Master Captain for more than 20 years, a biologist and a certified Florida master naturalist, Mark was eventually invited to head up the fly fishing program at Grande Lakes Orlando, a job he considers a homecoming.

The new Grande Lakes Waterpark is a good time for everyone. From splashing around the AquaVenture obstacle course and tearing down waterslides to the secluded escape of a private cabana or simply drifting along the lazy river, the waterpark was created with sunny days in mind  
 

To make wayfinding easier, the waterpark is divided into six different areas, each with its own unique allure. The Lagoon offers another form of escape beside calm waters tucked away in a corner of the park. There are canopied Hot Springs jacuzzis here, so if all that floating and soaking makes you a little hungry, grab a light bite at Knife Burger: The Outpost. However, if all that floating makes you a lot hungry, walk across the way to Knife Burger, where Chef John Tesar brings his tempting flavors poolside including his amazing burgers paired with fries and handspun shakes.

Chef Kelly’s signature dish, Pork Saltimbocca, pays homage to her grandfather who made the dish for her as a child. Her grandfather, named Primo, inspired her to open the restaurant and is, of course, its namesake. Pork Saltimbocca is the only dish that has remained on the menu at Primo since it opened.

Kelly is committed to environmental stewardship, so every ingredient is put to use. Anything that is left over is recycled or composted at the garden or on the farm in a full-circle relationship. Seasonally fresh ingredients bring inspiration to the menu, which changes almost daily.

Named in honor of the nearby Headwaters of the Florida Everglades, EvrBar is the first touchpoint for guests who are checking in, and for guests of the resort visiting the hotel.

The bar serves a variety of creative, seasonal cocktails with fresh ingredients sourced locally. An ever expanding food menu includes casual fare like burgers, chicken wings and salads as well as lighter choices such as ceviche, shrimp cocktail and lobster bao buns.

When Europeans led by Ponce de Leon arrived in Florida in 1513, they encountered people they would name the Timucua. They inhabited the region spanning from what is now north Central Florida to South Georgia. Using bows, arrows and spears, they were proficient hunters of deer, alligators, bear, turkey and pigs. As proficient as they were at hunting, the Timicuan people were accomplished farmers, credited with introducing staggered plantings that would lead to a continuous harvest during the long Florida growing seasons.

Florida is often associated with the Seminoles, a cultural mix of many groups of indigenous peoples who fled European settlement in central and western parts of Georgia and Alabama.

The Seminoles moved into areas once occupied by the Timucua, who were the victims of mass extinction due to epidemics and trauma from European contact. They were the region’s largest producers of livestock and cattle for years until settlers began moving in under British rule. As settlement increased, many Seminoles moved into the Everglades to escape contact. By the conclusion of the Third Seminole War in 1858, more than 3,000 Seminoles had been forced out of Florida, leaving just 300 tribespeople. Today, they are the only tribe in America that never signed a peace treaty and consider themselves an “Unconquered People.”

EUROPEAN ENCROACHMENT, CATTLE RANCHING AND THE IRON HARVEST

Cattle were introduced to Florida by the Spanish in 1521, and began thriving in the hot, humid climate. Cattle ranching became a vital industry for European settlers and for native ranchers. The first recorded chief of the Alachua Seminole tribe was called “Cowkeeper” because he had an enormous herd of cattle. The Seminoles were the largest cattle producers in the region until the mid-18th century when British rule began.

By the middle of the 19th century, cotton plantations and cattle ranches were king in Central Florida. After the Civil War, the cotton industry was dying and the economy once again turned to cattle. The South Florida Railroad had arrived and could efficiently transport produce north, and defunct cotton fields were being replaced with citrus farms boasting acres of tropical fruits, including grapes, pineapples, and oranges. The export of citrus on the iron rails was referred to as the “Iron Harvest.”

At the turn of the 20th century, the citrus industry and agriculture overtook cattle ranching, though the two industries would continue to prosper side-by-side for many decades. People moving to Florida in waves made it the 10th most populated state by 1960. Soon, the land would give way to theme parks and become one of the world’s most popular destinations.

SEEKING TO HONOR OUR PROUD HERITAGE 

Today, Orlando is one of America’s fastest-growing cities, renowned for its attractions and world-class hospitality. In the last half-century, growth and development have been so pronounced, much of the natural beauty of Central Florida has disappeared. From the beginning, Grande Lakes Orlando has made sustainability and conservation of the land a top priority. Every effort is made to maximize energy efficiency and reduce the carbon footprint throughout the resort.

The Grande Lakes property was a working cattle ranch right up until the day the ground was broken for development. Occasionally, remnants of the old farm can be found in the most remote, natural areas of the resort.

In the early 19th century, farmers would log cypress trees down the creek to make shingles for homes. Hence the name, “Shingle Creek,” was born. The Headwaters of the Everglades begin in Orlando with Shingle Creek. Sportsmen can play championship golf on a Greg Norman championship golf course, a certified Audubon Cooperative Sanctuary that protects natural resources and habitats while blending effortlessly with the landscape. There are no fewer than 12 private lakes and ponds where guests practice catch-and-release fly fishing and cast fishing. Other recreation not commonly found at Florida resorts include falconry experiences and mountain biking on the Hidden Lake biking trail.
 

MAINTAINING A THRIVING ECOSYSTEM FOR PLANTS AND WILDLIFE

With 500 acres and a visible commitment to conservation, it’s no surprise that wildlife and natural habitats abound on the resort. It’s not uncommon to see deer or wild turkeys roaming among the cypress domes and palmetto groves across the property.

There are over 72 species of birds throughout Grande Lakes. The great horned owl can be seen nesting on platforms set out by Grande Lakes naturalists. Turn your eyes to the sky and you may even see a bald eagle. Florida has the largest population of bald eagles of every state but Alaska with over 1,500 pairs. The birds and animals have plenty of natural habitat to call home. Grande Lakes is exceptionally lush and green with a wide variety of native trees and plants. TENNIS Guests can play on three lighted, Har-Tru championship courts, or brush up on their game with professional instruction.

ECO-TOURS Shingle Creek serves as the Headwaters of the Florida Everglades and shares much of its ecosystem with South Florida. Trained guides travel with guests on all-terrain golf carts to Shingle Creek where they take kayaks or canoes to close encounters with much of the rich wildlife Florida has to offer.

KAYAKS AND CANOES always a fine time for a boat ride at Grande Lakes, and there is no finer setting for paddling, drifting and cruising. Guests are able to explore the serene and scenic waters of 11 private lakes including mile-long Shingle Lake in kayaks and canoes.

MOUNTAIN BIKING Who says you have to have mountains to have mountain biking? Guests enjoy adventurous, challenging rides on the two-mile Hidden Lake mountain bike trail riding quality, brand-name mountain bikes. Fresh air and exercise are the order of the day

FLY FISHING The 12 private lakes and ponds on the Grande Lakes Orlando grounds serve as a well-managed fishery and excellent place to land a trophy bass. Guests can choose between traditional spin fishing and fly fishing, between fishing by drift boat or from the shore. All fishing at Grande Lakes is catch-and-release and artificial lures are used instead of bait fish. Instruction is available.

SUNRISESAFARI The natural world surrounding Grande Lakes springs to life in the early morning—the perfect time for guests to hop aboard all-terrain golf carts led by guides to observe and encounter the wildlife of Grande Lakes, including white-tailed deer, bobcats, alligators and owls.

FALCONRY The ancient sport of falconry presents guests with the unique opportunity to get up close and personal with 10 species of birds of prey—some with a four-foot wingspan and inch-and-a-half long talons. Classes are taught by a Master Falconer, teaching not only the history and rules of hunting with birds but how to hold and call them. Guests also “walk with a hawk,” and interact with falcons in the field.

The Headwaters of the Florida Everglades begin nearby Shingle Creek and are a focal point of Grande Lakes’ Eco-Tours.

But when the project was first conceived at the turn of the millennium, it represented something far more ambitious: one of the largest and most significant non-gaming resort developments in the United States. 

This is the story of how Grande Lakes evolved from a bold real-estate vision into one of Central Florida’s defining hospitality landmarks.

The Land and Legacy of Shingle Creek

Long before Grande Lakes Orlando was envisioned as a luxury destination, the 500-acre tract of land was rural and agricultural in character, shaped by centuries of Florida history. Set along the banks of Shingle Creek - the northernmost headwaters of the Florida Everglades - this land was once dominated by cypress, pine, marshes, and wide stretches of pasture. In the late 1800s, early settlers harvested cypress trees along the banks, fashioning the wood into roof shingles that gave the waterway its enduring name. 

As settlement slowly expanded across Central Florida, the surrounding acreage evolved into ranchland, where cattle grazed across open fields shaped by seasonal rains and fertile soil. For generations, cowboys tended the herds on this quiet agricultural terrain and reflected the rural character of Southern Orange County - A stark contrast to the world-class resort destination that would eventually rise from the same storied ground.

A Bold Vision in a Booming Market

In the late 1990s and early 2000s, Orlando’s growth as a meeting and leisure destination was accelerating rapidly. The expansion of the Orange County Convention Center and steady tourism numbers signaled an opportunity for high-end accommodations that could serve both corporate and upscale leisure markets.

In April 2001, Marriott International partnered with Thayer Lodging Group to announce plans for a massive dual-branded luxury resort. Industry coverage at the time noted the project would include a 1,000-room JW Marriott and a 500-room Ritz-Carlton, along with a championship golf course and expansive meeting facilities – all set across hundreds of acres of natural Florida landscape.

Before luxury towers rose above the landscape, the property was a working ranch featuring 12 natural lakes. The land's pastoral character – complete with open pastures, native wildlife, and interconnected waterways – would later influence the master plan, preserving much of the original topography and water features. Rather than erase the land’s heritage, developers chose to build around it, weaving the lakes and wetlands into the resort’s identity.

Construction of the resort was a monumental undertaking. At peak development, more than 2,500 construction workers and tradesmen were involved in building the property, contributing millions of labor hours to transform raw Florida wetlands into a fully integrated luxury destination. The scale of manpower required underscored the ambition behind the project and made it one of the largest construction efforts in Central Florida hospitality at the time.

It was an unusually large undertaking for a luxury resort that wasn’t tied to gaming or a theme park. Trade publications described the development as one of the most ambitious hospitality projects of its era – a calculated bet that Orlando’s convention and luxury travel markets would continue to rise.

Opening in 2003: A Landmark Arrival

On July 1, 2003, Grande Lakes Orlando officially opened its doors. The launch marked one of the largest resort debuts in the country at the time.

The property featured two flagship hotels: The Ritz-Carlton Orlando, Grande Lakes and JW Marriott Orlando, Grande Lakes – the first time the two luxury brands had been paired together at such scale in the Orlando Market. 

Central to the resort’s identity was its integration of landscape and luxury. Unlike many high-density developments near the theme parks, Grande Lakes was intentionally spread across lakes and protected wetlands. The 18-hole championship golf course, designed by Greg Norman, wound through the property’s natural terrain. A sprawling spa, extensive event spaces, and multiple dining outlets positioned the resort as both an executive retreat and a leisure haven.

That same year, the project received the Americas Lodging Investment Summit’s “Transaction of the Year” award – recognition of the development's scale and complexity,

Building a Reputation

In its early years, Grande Lakes quickly became a fixture in Orlando’s high-end hospitality scene. The resort’s combined room count – approaching 1,600 rooms – made it a powerful player in the meetings and incentives market. Its ballroom and conference spaces hosted major corporate gatherings, while its secluded setting attracted destination weddings and affluent travelers.

Ownership changes followed as the property matured. In 2006, Thayer Lodging Group sold the resort to CNL Hotels & Resorts for approximately $753 million – a transaction that reflected strong investor confidence in Orlando’s hospitality sector. 

By 2011, the resort underwent a reported $28 million redesign, refreshing guest rooms, updating technology, and enhancing public spaces. These improvements signaled a recognition that in the luxury market, evolution is not optional – it is essential.

As the resort matured, industry accolades accumulated. Over the years, the property and its two hotels have earned repeated recognition from Condé Nast Traveler’s and Travel + Leisure’s World’s Best Awards. The Spa has consistently been ranked among the top resort spas in the nation, while the golf course has been recognized among the state’s premier resort courses. 

A Shift in Ownership and Ambition

A major turning point came in December 2018, when a joint venture led by Trinity Real Estate Investments and Elliott Management acquired Grande Lakes Orlando. The new ownership embarked on an expansive repositioning strategy, investing hundreds of millions of dollars into renovations and new amenities. 

The scale of reinvestment reshaped the resort experience. Guest rooms were redesigned with lighter palettes and modern finishes. Meeting spaces were refreshed to meet contemporary technology demands. Dining concepts were elevated to compete not just locally, but nationally. 

One of the most visible additions was a new waterpark complex, complete with a lazy river, waterslides, and private cabanas – broadening the property’s appeal to families while preserving its luxury identity. The balance between serene spa gardens and lively aquatic recreation underscores the resort's evolution into a multi-generational destination. 

Culinary Recognition and Five-Star Status

Grande Lakes has increasingly distinguished itself through culinary ambition. At the Ritz-Carlton, the Knife & Spoon restaurante earned a MICHELIN Star in the inaugural Florida edition of the MICHELIN Guide, placing the resort on the global gastronomic map.

Yet the culinary program’s roots are literal as well as figurative. Whisper Creek Farm, the onsite working farm, supplies produce and honey to the resort’s kitchens and spa – part of a broader sustainability initiative that includes beekeeping and responsible land stewardship. The farm reinforces Grande Lakes’ original design philosophy; luxury embedded within, not imposed upon, the natural environment.

Most notably, The Ritz-Carlton Orlando, Grande Lakes was recently awarded the prestigious Five-Star rating by the Forbes Travel Guide – one of the hospitality industry’s highest distinctions. With this achievement, The Ritz-Carlton Orlando became the only Five-Star hotel in Central Florida and one of just nine properties in Florida to hold the coveted designation. The Forbes Five-Star award recognized properties that deliver exceptional service, world-class amenities, and uncompromising guest experience. Achieving this status places the resort among an elite group of hotels worldwide and marks a defining milestone in its two-decade evolution.
