Everyone loved the fresh flavor and demand for fresh produce grew across the resort. Plans were soon underway for a sustainable farm—one that would enable the resort to harvest fresh produce, but at the same time, give back to the land.</p><p>&nbsp;</p><h2>FRESH IS ALWAYS ON THE MENU</h2><p>As more produce grew, so did the commitment. A barn was soon added along with chickens for fresh eggs, quail and duck. An existing apiary was soon relocated to the farm as well. Today Whisper Creek Farm features a 7,000-square-foot fruit and vegetable garden with an adjoining 6,000-square-foot outdoor event space. The land features 18 seven-foot citrus trees, including tangerine, kaffir lime, kumquat and pineapple, all natural in the Central Florida landscape. Seasonal offerings often include broccoli, cauliflower, zucchini, yellow squash, blueberries, plantains, bananas, tomatoes, pumpkins and more.</p><p>The farm-fresh ingredients are used across the resort, but especially at Whisper Creek Farm: The Kitchen. As the name suggests, Whisper Creek Farm was the catalyst for the restaurant, whose menu is directly influenced by seasonal ingredients.</p><figure class="image"><img src="https://mds-assets.marriott.com/cms-platform-for-marriott/content-studio/fresh-is-always-on-the-menu.jpg" alt="Fresh Is Always On The Menu"></figure><h2>MENU INSPIRATION FROM THE INGREDIENTS THEMSELVES</h2><p>Executive Chef Alberto Taboada says working with a living, breathing farm is exciting. “When I walk the farm, it’s sensory. The colors. The smells. The tastes. All of a sudden something will pop and I start putting a dish together in my head.”</p><p>“Normally we come up with things based on what the chef wants,” adds Executive Sous Chef Rhys Gawlak, “It’s really the farm that determines the menu, it’s kind of a fun experience.”</p><p>“We have to be very creative, because the idea of having a farm is to be able to use everything,” according to Chef Taboada. While some hotels and resorts have gardens and grow their own produce, Whisper Creek Farm has been precedent-setting in the industry. More than anything else, he enjoys showing guests a side of Orlando that is so unexpected. It’s especially gratifying to see them, “truly present, enjoying quality time in nature,” he says.</p><p>Mark caught his first fish at the age of four, and he’s been hooked on the sport ever since.</p><h3 style="text-align:center;">No fewer than 12 lakes and ponds grace the property, one over a mile long. The water is perfect for boating, kayaking, fishing or simply admiring</h3><p>He is the true definition of a local, having grown up here in Central Florida fishing, swimming and boating the lakes, creeks and coast with his dad. They inhabited the region spanning from what is now north Central Florida to South Georgia. Using bows, arrows and spears, they were proficient hunters of deer, alligators, bear, turkey and pigs. As proficient as they were at hunting, the Timicuan people were accomplished farmers, credited with introducing staggered plantings that would lead to a continuous harvest during the long Florida growing seasons.</p><figure class="image"><img src="https://mds-assets.marriott.com/cms-platform-for-marriott/content-studio/central-florida-is-a-rich-land-1.jpg" alt="central-Florida-is-a-rich-land-1"></figure><p>Florida is often associated with the Seminoles, a cultural mix of many groups of indigenous peoples who fled European settlement in central and western parts of Georgia and Alabama.</p><p>The Seminoles moved into areas once occupied by the Timucua, who were the victims of mass extinction due to epidemics and trauma from European contact. They were the region’s largest producers of livestock and cattle for years until settlers began moving in under British rule. As settlement increased, many Seminoles moved into the Everglades to escape contact. By the conclusion of the Third Seminole War in 1858, more than 3,000 Seminoles had been forced out of Florida, leaving just 300 tribespeople. Today, they are the only tribe in America that never signed a peace treaty and consider themselves an “Unconquered People.”</p><h3 style="text-align:center;">EUROPEAN ENCROACHMENT, CATTLE RANCHING AND THE IRON HARVEST</h3><p>Cattle were introduced to Florida by the Spanish in 1521, and began thriving in the hot, humid climate. Cattle ranching became a vital industry for European settlers and for native ranchers. The first recorded chief of the Alachua Seminole tribe was called “Cowkeeper” because he had an enormous herd of cattle. The Seminoles were the largest cattle producers in the region until the mid-18th century when British rule began.</p><figure class="image"><img src="https://mds-assets.marriott.com/cms-platform-for-marriott/content-studio/central-florida-is-a-rich-land-2.jpg" alt="central-Florida-is-a-rich-land-2"></figure><p>By the middle of the 19th century, cotton plantations and cattle ranches were king in Central Florida. After the Civil War, the cotton industry was dying and the economy once again turned to cattle. The South Florida Railroad had arrived and could efficiently transport produce north, and defunct cotton fields were being replaced with citrus farms boasting acres of tropical fruits, including grapes, pineapples, and oranges. The export of citrus on the iron rails was referred to as the “Iron Harvest.”</p><p>At the turn of the 20th century, the citrus industry and agriculture overtook cattle ranching, though the two industries would continue to prosper side-by-side for many decades. People moving to Florida in waves made it the 10th most populated state by 1960. Soon, the land would give way to theme parks and become one of the world’s most popular destinations.</p><h3 style="text-align:center;">SEEKING TO HONOR OUR PROUD HERITAGE&nbsp;</h3><p>Today, Orlando is one of America’s fastest-growing cities, renowned for its attractions and world-class hospitality. In the last half-century, growth and development have been so pronounced, much of the natural beauty of Central Florida has disappeared. From the beginning, Grande Lakes Orlando has made sustainability and conservation of the land a top priority.
